Circle H Angus 18+ month old beef will weigh out according
to size of animal, but to give an idea, the average
size would be:
Whole Carcass:
425 - 600 lbs. for 18+month old beef
712 lbs approximately for 24 month old beef
Front or Hind Quarter: Average 117 - 120 lbs.
The price you pay is based on the carcass weight before
it is cut according to individual cutting instructions.
The weight is called “hanging weight” or “on the rail”.
Once the carcass has been cut, the weight of the meat
will be around 50 - 66% less than the hanging weight
with the difference being the bones, trim and organs.
Please inform the butcher if you would like to keep
any of these, as you pay for them.
The final price to you includes the butcher fees
of:
56¢/lb. cut, wrapped and frozen
$85.00/animal butchering fee
CDIC fee $3.00/head
Brand Inspection fee $6.50
Packaging Boxes $1.50 each
Generally, the customer is required to phone the butcher
with their cutting instructions who will help with
advice on the various cuts and options:
Whole or Half Side: $3.50/lb.
Quarter - Front: $3.25/lb.
Quarter - Hind: $3.75/lb.
Order a small-framed animal if less meat is required.
If family or friends wish to share a half side 50/50
and would like it to be packed separately, the extra
fee is
5¢/lb. hanging weight (between $20 - $30).
Dry-aged hanging is for 14 days, but if a customer
wishes it to be hung longer, then the charge is $2.50/half
side/day.
BEEF-IN-A-BOX
This is based on actual weight or “off the rail”,
and is the meat you take home after the trim and bones
have been removed. This is a good way to go if you
have smaller freezer space, or for those who do not
want larger quantities of meat. Beef-In-A-Box consists of a varied selection
of packaged meat such as ground beef and stewing beef,
short ribs, steaks and roasts. The ground beef and
stewing beef are packaged in one pound packs.
The weight of a beef-in-a-box is around
24 lbs. and the price is $150.60.
HAMBURGER & HAMBURGER PATTIES
Year-round supply. Usually in stock are the 1 and
1½ lb. packages at $3.25/lb. and hamburger patties
10 x 4 oz. patties at $11.00/pack.
LAMB & GOAT
The ewes and lambs run all summer long at Circle
H Ranch; and eat the wonderful vegetation that is found
in the bush and on pasture. The ewes are a cross-section
of breeds, but mainly Suffolk and Hampshire cross.
The lambs usually weigh out hanging weight to around
55 lbs. The same applies to lamb, as with the beef,
with the price on the “hanging weight” before it is
cut according to instructions and the bones and trim
removed. Please instruct the butcher if you wish the
following as these are all in the price you pay:
Shanks to be left on the leg roasts
Trim and bones to be kept - Don’t
forget dogs and birds, if not for human use!
Organ meat
There is a minimum for packaging
lamb and goat, so if you request LESS than:
4 chops/package
2 steaks/package
there is a $5.00 extra charge.
Also:
Boned out ribs or legs
Legs for stewing meat
Legs butterflied
$2.50 extra per piece.
$5.00 extra for Crown Roast
No extra charge for a
Rack of Lamb.
The final price to you includes:
